Dr. Ali is engaged as a professor in the Department of Chemistry of Rajshahi University of Engineering & Technology (RUET), Bangladesh with effect from 28 July 2013. He was employed as a Senior Lecturer in the Department of Bioprocess Engineering, Faculty of Chemical Engineering of the Universiti Teknologi Malaysia, Malaysia from 4th June, 2010 to 3rd June, 2013. In addition, as a head of department, he was engaged in management and administrative responsibilities in support of the academic activities of the Department. In spite of teaching profession, he is actively engaged in research work on the field of Food Chemistry and supervise the research works of a number of post graduate students. His research interests include analysis of food components with health benefits, chemical changes in food upon heating and processing, lipid oxidation and changes in fats and oils during heating. Another area of interest focuses on characterization of antioxidants from indigenous plants and agricultural wastes, and their contribution to antioxidant activity/stability during processing and storage of food products. The ultimate goal of this research is to utilize innovative methodology to develop health-targeted new product alternatives and to encourage life-long healthful eating habits.
